Olivia's Favorite Snickerdoodles in Vegan and Kosher

I always find that that space between Halloween and the start of December, with the exception of Thanksgiving, is a bit ho-hum. I tend bake items with cinnamon and spices, while lighting a delicious smelling fall candle the best way to get thru this time of year.

If you suffer from Depression, you may understand how far a small pleasure like a buttery cinnamon cookie, served with your favorite coffee, tea, or soda can go in making yourself feel better.


This season, from my happy, or just hanging in there, oven to yours, I present my never before shared recipe for vegan and Kosher snickerdoodles.

This recipe takes 10 min of prep time, 10 minutes cook time and yields 2 dozen cookies, enough to share or freeze


The supplies needed are: electric hand mixer, or mixing spoon, 1 large mixing bowl, 1 medium sized mixing bowl, measuring cups, and cooking spray. The ingredients needed are 2 cups sifted flour, 2/4 cup white cane sugar, 1/4 brown cane sugar, 1 teaspoon vanilla, 1/4 tsp kosher salt, 1/2 cup vegetable oil, 1/2 cup butter, 1 teaspoon baking soda, 1 teaspoon baking powder, mix of cinnamon and sugar.


STEP 1 Preheat to 350 Degrees. In a medium sized bowl cream together the sugars, vanilla, and vegan butter.


Step 2 In a small bowl, whisk together the flour, salt, baking soda, baking powder. Pour into large bowl and combine until the dough is a crumbly consistency that can be formed into a ball.




Step 3 Pour in the 1/2 cup vegetable oil and combine on medium speed.







Step 4 Line the baking sheet with parchment paper (preferred), or aluminum foil and cooking spray. Roll dough into balls, then roll into the cinnamon sugar mixture. Flatten slightly, place on a baking sheet. Bake for 8 minutes.







Step 5 Remove from the oven. Let cool for five minutes and place on a cooling sheet.

Late Plum Cobbler, Vegan

Prep Time 10 Minutes Bake Time 20 minutes Yields 4 Servings

  • 2 cups Sifted flour

  • 3/4 cup pure can sugar

  • 1/4 cup brown pure cane sugar

  • 1 teaspoon vanillia

  • 1/4 teaspoon Kosher Salt

  • 1/2 cup vegetable oil

  • 1/2 cup vegan butter

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda


Directions


  1. Preheat to 350 Degrees. In a medium sized bowl cream together the sugars, vanilla, and vegan butter.
