Vegan Yogurt Bowl with peaches, arugula, walnuts and chocolate

A great way to reuse left over arugula leaves! Their texture combines well with the sweetness of the peaches, smoothness of the dairy-free yogurt, and slight tartness of the chocolate.

Sing it with me, "the best part of waking up is...arugula in my silk almond yogurt?" Just trust me on this. Arugula has vitamin C and Magnesium. It is 3 calories preserving and fills the inside of your stomach. Beyond that, this mighty green adds an aesthetic texture to your bowl. I enjoy making these Erev Sabbat afternoon, placing plastic wrap over the tops and refrigerating overnight. That way they are ready in the morning like the Easter bunny!

This recipe takes 5 min of prep time, no cook time and serves as many as you have ingredients for. The supplies needed are: small or medium sized bowl, cutting board and knife, and plastic wrap or your eco-friendly alternative (drop me a line or comment if you have one, I am in dire need of direction.) You will need the following ingredients: 1/3 fresh peach per serving (you can also used canned, about three slices), about ten pieces of arugula, 4-5 walnut pieces, crushed, 3 small squares of vegan, kosher chocolate in your band of choice, 1/2 cup vegan, kosher, non-dairy yogurt.

STEP 1 Cut up the peach first into slices, then in to bits

I finally gave in and purchased some wooden bowls. I'm happy I did. The asthetic is wonderful.






Step 2 Place the 1/2 cup of non dairy yogurt in one half of the bowl. Lay the arugula leaves on the other side.








Step 3 Assemble the bowl. Place the peaches on top of the arugula. Top the yogurt with walnut and chocolate pieces. Enjoy now, or cover with plastic wrap and eat in the morning.

Vegan BBQ Beef and Sesame Noodle Bowl

Prep Time 5 Minutes Cook Time 25 min Serves 4

Ingredients

  • 1/3 ripe peach per bowl

  • 1/2 cup non-dairy yogurt per bowl

  • 10 arugula leaves per bowl

  • Vegan chocolate bar, crumbled

  • Walnut pieces, crumbled


Directions


  1. Cut up the peach first into slices, then in to bits

  2. Place the 1/2 cup of non dairy yogurt in one half of the bowl. Lay the arugula leaves on the other side.

  3. Assemble the bowl. Place the peaches on top of the arugula. Top the yogurt with walnut and chocolate pieces. Enjoy now, or cover with plastic wrap and eat in the morning.
